White pepper, the fruit of the same plant, is harvested when ripe, that is, when the outer skin turns red. The skin is removed and inside are the white peppercorns. It causes less "burning" in the mouth. It is suitable for "white" cooking (cream sauces, béchamel, etc., egg and lemon), in purees, in white meats and fish.
